Title: Metabolização da galactose por leveduras isoladas de frutas cítricas em decomposição

Resume: O setor mundial de sucos cítricos processa anualmente mais de 40 milhões de toneladas de frutas. Estima-se que metade do peso seco da fruta torne-se um rejeito rico em celulose, hemicelulose e principalmente pectina, que apresenta em sua composição galactose e xilose. Foram isoladas e analisadas quanto ao crescimento, consumo de açúcar e produção de etanol em meios de galactose e xilose, três linhagens de leveduras da microbiota local selecionadas a partir de laranjas em decomposição. Comparou-se seus desempenhos com o da levedura Saccharomyces cerevisiae. Os resultados mais expressivos encontram-se em meios de xilose, sendo produzido 2,87 g.L-1 e 1,81 g.L-1 pelas cepas CHAP-078 e CHAP-047, respectivamente. Entretanto as linhagens estudadas não foram capazes de crescer ou cresceram somente após uma fase lag extensa em meios contendo galactose. Os dados indicam a possibilidade de se encontrar, em laranjas em decomposição, leveduras capazes de metabolizar carboidratos não fermentados por S. cerevisiae.
Abstract: The citrus juice industry processes more than 40 million tons of fruit annually. It is estimated that half the dry weight of the fruit becomes a subproduct rich in cellulose, hemicellulose and mainly pectin, which has in its composition galactose and xylose. Three strains of yeast from the local microbiota selected from decomposing oranges were isolated and analyzed its growth, sugar consumption and ethanol production in medium of galactose and xylose. Their performances were compared with that of the yeast Saccharomyces cerevisiae. The most expressive results were found in xylose medium, producing 2.87 2,87 g.L-1 and 1,81 g.L-1 by CHAP-078 and CHAP-047 strains, respectively. However, the studied strains were not able to grow or they did it only after a long lag phase in galactose-containing medium. Therefore, the data indicates the possibility to discover, in decomposing biomass, yeasts capable of metabolizing carbohydrates not fermented by S. cerevisiae.
