Abstract/Resumen: The Biofuels have significant representativeness in the Brazilian energy matrix. In this context, biodiesel is currently gaining ground, diluted to mineral diesel by a percentage of 10%. However, unlike fossil fuels, which are relatively inert, this biofuel presents unsaturated compounds, which attribute the characteristic of rapidly degrading by the action of atmospheric air, light radiation, temperature, humidity, inorganic or microbial contaminants and consequently, the oxidation of biodiesel decreases the quality of the same. This way, to minimize the degradation, antioxidants, preferably from biomass, are added, which have received more attention from research scientific. Therefore, the residue of the brewing industry has characteristics and potential as a natural antioxidant, because it has numerous phenolic compounds, which attribute to this potential antioxidant material. In Brazil, approximately five million tons of waste are produced annually by the brewing industry, and to date, most of them are used as a supplement in animal nutrition. In this way this purpose work to evaluate antioxidant activity in biodiesel of acid (FERREIRA, 2015; pg. 36) and methanolic extracts (BARBI, 2016; pg. 12) obtained from the residue of the brewing industry. In order to obtain the antioxidant extracts, two methods were used, with solvents that have chemical characteristics capable of extracting the phenolic compounds from the Brewer's Residue. Therefore, the biodiesel synthesis method and subsequent treatments were modified to insert the antioxidant, there was an increase in the number of steps in the process. For the investigation of the potential attributed to the methods of insertion of the antioxidants to the analyzed material, because for the methanolic extracts, the incorporation took place in the synthesis route of the biofuel replacing part of the methanol used in this step. For the acid extracts, the biodiesel incorporation was in the acid wash step. The antioxidant efficiency was measured via induction time using the oxidation acceleration technique. The results obtained for the oxidative stability tests were statistically analyzed by the Tukey test, in which the highest induction time assigned to the samples treated with the extracts, which had control divergence was for the samples washed with the acid extracts at the concentration of 15 gL-1, attributing an increase to the induction time of the sample by 146% compared to the control. However, according to the data obtained in this study indicate that this residue has antioxidant potential, but not reaching the minimum IT value established by the ANP that would be 8 h to be commercially used in mixture with mineral diesel. A study situation was developed, aiming at the use of the biodiesel theme for the teaching of thermochemistry, focusing on the calorific value attributed to biofuel.
