Sustentabilidade e alimentação escolar: análise nutricional e ambiental dos cardápios em um município catarinense

Abstract

The study verified the environmental impact, analyzing the water and carbon footprint, as well as the nutritional value of meals offered in public schools in a municipality of Santa Catarina, in March 2020. We compared the averages found for the environmental, macro and micronutrient footprints of 20 menus with and without meat from the Mann-Whitney test. Water and carbon footprint showed higher averages in meat menus. There were no significant differences in relation to nutrients with the exception of iron, pointing out that preparations without meat can be used without nutritional harm to students. Therefore, school feeding menus could reduce the amount of meat offered for sustainability.
